Ingredients
  

  • 1 Zucchini
  • 3 cloves Garlic
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Red Pepper Flakes Optional
  • 1/2 tsp Grated Parmesan Cheese Optional

Instructions
 

  • Clean Zucchini. Use a peeler and scrape the Zucchini vertically to make noodles.
  • Chop garlic and keep aside.
  • Heat oil in an iron skillet(preferably) on medium heat until the skillet is hot.
  • Add garlic to the pan and cook for 1 minute. Take care not to burn it.
  • Reduce heat. Add the Zucchini noodles, salt, and red chili flakes and toss the noodles around.
  • Cook until the zucchini is soft but not mushy – 2 minutes.
  • Serve immediately topped with parmesan cheese.

Notes

This is a healthy noodle that can also be served cold as a salad. Add a portion of your favorite protein like grilled chicken or fish to make it a full meal.
