Zucchini aglio e olio
Zucchini noodles tossed with roasted garlic and olive oil for a healthy meal.
Zucchini aglio e olio
Ingredients
- 1 Zucchini
- 3 cloves Garlic
- 2 tbsp Extra Virgin Olive Oil
- 1/2 tsp Salt
- 1/4 tsp Red Pepper Flakes Optional
- 1/2 tsp Grated Parmesan Cheese Optional
Instructions
- Clean Zucchini. Use a peeler and scrape the Zucchini vertically to make noodles.
- Chop garlic and keep aside.
- Heat oil in an iron skillet(preferably) on medium heat until the skillet is hot.
- Add garlic to the pan and cook for 1 minute. Take care not to burn it.
- Reduce heat. Add the Zucchini noodles, salt, and red chili flakes and toss the noodles around.
- Cook until the zucchini is soft but not mushy – 2 minutes.
- Serve immediately topped with parmesan cheese.
Notes
This is a healthy noodle that can also be served cold as a salad. Add a portion of your favorite protein like grilled chicken or fish to make it a full meal.
