Flat Rice a.k.a Poha is sweetened with fresh cococut, cardamom powder and jaggery syrup.

Ingredients
  

  • 1/2 Cup Thin Beaten Rice/Poha
  • 1/4 Cup Jaggery powder
  • 1/2 Cup Fresh grated coconut You can find this in frozen section in Indian grocery stores
  • 2 Pieces Cardamom pods – seeds powdered
  • 4 Tbsp Water

Instructions
 

  • Heat a pan on medium heat and add water. Add jaggery power in it and mix until it dissolves
    Boil Jaggery
  • Heat the jaggery syrup for 3-4 minutes until you see it starts boiling. Lower the heat.
  • Add coconut gratings and mix it well and cook for 2 minutes. Switch off the gas and let it cool. It should be warm before you add in the poha/beaten rice.
  • Add cardamom powder and poha and mix it well until you see poha is coated in the coconut mixture. Serve as it or with some spicy sev on top
